In this course students learn advanced techniques in both Eastern and Western culinary arts and develop leadership and supervisory skills to manage F and B operations.
入学条件
Students must be 20 - 29 years old and needs to have completed post high school diploma and above. They must possess a minimum level of culinary / kitchen experience i.e. a recognised culinary certificate or minimum six months commercial kitchen experience. They should have a passion for culinary, service and F and B. They must also possess leadership qualities; be artistic and disciplined.

Applicants must pay a non refundable application fee of S$800. In addition to these, they must submit passport photo (500 x 415 pixels, at least 300 dpi), NRIC (Singapore citizens), student transcripts, certificates of completion, latest updated resume and two letters of recommendation.

The modules are Sanitation Management; Stocks, Soups, Sauces, Culture and Cuisines; Meat and Seafood Fabrication, Fundamentals of Western Cuisine - Italian, French and American cooking, Dining and Beverage Service, Introduction to Herbs and Spices; Dried and Preserved Goods and Exploring Fresh Markets, Techniques of Asian Cuisine, Leadership and Supervisory Development; Principles of Nutrition Management, Communication Skills; Garde Manger, Baking, Pastry and Plated Desserts, Menu Planning, Cost Control and Concept Design; Scaling of Asian Recipes, Herbs and its Varied Uses; Master Spice Blender and Asian Regional Cuisines: Chinese, Indian, Thai, Indonesian, Indochina, Japanese.

The At-Sunrice GlobalChef Academy is located at Fort Canning Park where Singapore's first spice garden was started by Sir Stamford Raffles in 1822. The academy was conceptualized in 1999 by the founder Mrs Kwan Lui and started its operations in 2001 with the aim of being an Asian Culinary Academy. By 2004, At-Sunrice has expanded its vision to embrace both Asian and Western cuisines. Today, the academy is recognised by the Singapore Workforce Development Agency (WDA) as National CET Institute (NCI) administering nationally-recognised diplomas is partnered with America's world class university Johnson and Wales University (JWU) and they are members of the International Association of Culinary Professionals (IACP) and the American Culinary Federation (ACF).
